I have done panels a couple of different ways.
I have put the fabric right sides together and the batting and used the birthing method - I sewed all of the way around but leave 12" or so open. Then the pull the quilt through the opening turning it right side out. Then I top stitched around the edges and quilt however I wanted. There is probably a YouTube video on this
Or you can just layer the batting between the panel and backing fabric. Quilt and bind like any other quilt
As far as "easy" patterns for your fabric... did you try watching any of the Missouri Star Quilt tutorials? Jenny has lots of ideas. Some more involved than others. She uses precut fabric, but you can easily make the yardage work.
