In a situation like yours, and I have been there too, I will finish the quilt all but the final corner where I will be placing the label. When the dear one arrives, I add the label details and sew it into the seam and hand stitch the two sides. I have just started using a 4 or 5 in square folded on the diagonal thus only have one side to hand stitch.
I do hand write my labels, so sometimes I will add all of the info to the label, sew it on and just add the baby name later.
