My husband does this all the time. Put a layer of old vegetables on the bottom (celery, onions, whatever you have in the crisper. He even did cabbage once.) Put a little water or broth on the veggies, maybe 1 cup? Then he puts some thyme and salt and pepper on the turkey, with a meat thermometer and cooks it on high for an hour, then turns it down to low until the temp is what you want. (I know it's blasphemy, but WE never go as high as 180.) After taking it out of the cooker, we always let it rest for at least 10 minutes.
