I wouldn't rip out any of the stitching, as I seriously doubt that anyone would notice. It is an adorable quilt. I have been quilting for over 25 years, still have not mastered the tightly stitches you used, so I now use raw edge applique and I'm happy with that. Applique can be hard to master, but I think you did just fine with yours.
