What if you made it like it is supposed to be and then appliqued the table runner(s) to a length of fabric so that you have two or three of the spicy spirals on a background fabric? You would still be using the directions that you started out with, but would be getting the length and not lose any of the spiral. You could even reverse applique the spirals so that there were no raw edges. Or use a facing (think clothes sewing) on the outside edge, so that you only have extra fabric for 1/2 to 1" on the outside edge and then applique it (them) down.
