How about a twice baked potato? Slice off part of the skin to make an opening, hollow out the center and put in a mixing bowl. Add sour cream, cream cheese, minced onions, bacon, pepper, garlic seasoning (I don't add salt, the bacon and cream cheese provide salt) -- basically anything you want and just enough so it tastes good. Using a mixer, beat everything together until it is well mixed. Put back into the emptied potato skin heaping it up. Bake about 20 minutes, until heated through. You can make this from one or a whole crew (though I skip the skins and use a big baking dish for a crowd)
