I have made a few jelly roll race quilts with fleece backing. I used spray adhesive to put the quilt and the fleece together. It is true that you won't have to do a lot of quilting as there is no batting and no restrictions. You just want to keep the fleece from shifting. All suggestions are good. I believe having fleece on the back helps speed up the process. Also, if you "google" 5-minute and 10-minute blocks, you will find something that is quick and easy to make and the blocks are as large as you want them and will not need a lot of quilting.
