Nobody mentioned old fashioned bread potatoes. Yummy! Use any kind of left over potatoes. Slice or cube potato or use mashed potatoes. Add stuffing bread cubes or tear up a couple slices of fresh or leftover bread or buns. Put in a skillet with a little oil or butter, or fry and crumble a piece of bacon in the skillet first. Add the potatoes, and just about anything else you like, like onions, or chopped celery or canned mushrooms, or seasoned salt and pepper. Mix an egg or two in about a cup of milk. Pour over it to moisten the bread, stirring well. Don't add too much to make it soupy, just nice and moist. Cover and "steam" over med heat until its the consistency of stuffing. Remove lid and turn up the heat and fry it, stirring and turning until it browns. You can use regular or canned milk. Serve as is or with leftover gravy. Can be a breakfast food or serve with any meat in place of scalloped potatoes, etc. Once you make it, next time you can get creative and add all sorts of left-overs like veges or meat to it.
