This isn't from scratch---but my grown kids prefer this ever Thanksgiving instead of pumpkin!

2 small boxes (4serving) REGULAR butterscotch pudding (NOT) instant
3 1/2 cups milk
2 Tablespoons butter or margarine
1/3 cup butterscotch chips
1 baked & cooled 9" pie crust----cooled.

Combine all ingredients but the pie shell in a pan. Cook over medium heat till it comes to a full bubbling boil. Remove from heat & cool 5 minutes---stirring twice. Pour into pie shell & refrigerate 3 hours. I also make this using chololate pudding & chocolate chips. Easy & delish!
