I think you should go for it! But, you and the person for whom you are doing it need to settle on the definition of the project. Determine the size and subject matter. I am sure that you can do it. I don't think stitching in the ditch is appropriately done with hand quilting-it doesn't show. Hand quilting is done to enhance the pattern of the quilt. I like the pattern you are thinking of but I think it would be hard to hand quilt as a beginner. When I look at the things you have posted I know you are one to be challenged to do techniques you haven't done before and you succeed beautifully; so, go for it!
