I use decorative stitching on my bindings all the time. If you are in doubt, fix yourself a sample with all the layers and try out the stitches on that. For my quilts, I sew the binding to the back then turn it to the front and stitch it down with the decorative stitch. I think the one I use was originally designed for stitching two pieces of fabric together without overlapping them.
