I have found many recipes on the web, but none are exact. Most don't use the double boiler. I even checked the Jello official site and can't find it.
Anyone have it? I know she was making it as far back as the early 70s, maybe earlier.

I'll bet this is the one. I got from our home-ec teachers, who served it at a banquet in our home-ed department. (This was in 1949.)I was an FHA member so was helping serve. They put a blob of mayo on it, but I couldn't stand the mayo. I've been making it ever since. I'll give you the recipe as they gave it to me, and then tell how I sometimes change it.

PINEAPPLE CHEESE SALAD
One 6-oz. pkg Jell-O
2 c. boiling water
40 large marshmallows
1/2 c. Mayonnaise
1/2 c. whipping cream
1/2 c. cottage cheese
1 c. crushed pineapple

Dissolve Jell-O in boiling water. Stir in marshmallows and dissolve. Cool. Add mayonnaise, whipped cream, cottage cheese and pineapple. Blend well. Chill.

For a fancy salad, dissolve one 3-oz. pkg. red Jell-O in 1 1/2 c boiling water. Pour into a flat bottom 9X13 pan. Chill level until firm. Pour pineapple cheese salad over. Chill till firm. Prepare another 3-oz. pkg. red Jell-O with 1 1/2 c. boiling water. Cool. Pour over salad. Chill till firm. Cut into squares and serve on lettuce leaf with a dollop of whipped cream or mayonnaise. Note: Colors of Jello layers can be changed to suit the occasion. Red Jell-O in the cheese layer will give you pink for Easter.

I have made this numerous times. Now I use fewer marshmallows, putting them into the blender to melt with the boiling water and first package of Jell-O, usually lemon, sometimes add some ice cream, sometimes put the cheese layer into the blender and blend well, and sometimes leave out the whipping cream and add Yogurt or Kefir. You really can't go wrong. Make it the way you like.
