I just finished a Chevron quilt that the blocks were set on point. I found it easiest to make a full block for each one because then you can set the pieced strip in the correct direction and then cut. I sewed a seam just inside the cutting line I drew just to keep the bias edges in check. I drew that line a quarter of an inch on the outside edge which gave me plenty for trimming after I have quilted the quilt. There is nothing worse than cutting them too small.

The other thing you can do is to take one of you blocks folded under 1/4" outside the center and there is you size of block. If you don't want to waste any fabric, maybe add an inch in length to the strips. If your blocks were 8" finished, cut them 8.5" x 9.5". Just be careful of the bias edges. Good Luck
