fried tomato omelet with Cajun taters
take a large tomato cut into disks and fry in olive or corn oil till soft
take 2 eggs scramble in dish and pour onto tomatos in pan
when solid flip to other side for a minute
then season to taste & serve
take large potato cut into disks
fry in pan w/ same olive oil or corn oil
season w/ Cajun spices
cook till golden brown
serve w/ eggs
