Campfire Omelet - One item that we would also use for breakfast was to take a heavy duty (freezer style) sandwich bag. We would have various omelet type items cut up, so onions, ham chunks, sausage bits, peppers, shredded cheese, etc. These items were in separate bowls and the person could choose their own toss ins. Put one egg into the freezer bag and use your fingers to mix up the yolk and white, add the items that you choose to have in the omelet. Then toss the bag into a boiling kettle of water. In a few moments you will have an omelet which is personalized to the person that made it. It is a great breakfast for groups.
Fruit Crumble - Another quick and easy recipe is a dessert. Take one can of pie filling and put it into a cake size type of pan. Crumble ginger snaps over the top and put a piece of foil over it onto the campfire. A little vanilla ice cream once it is finished on top, is very nice.
