I make hard boiled eggs like Mom did: Bring to boil and simmer for 11 minutes then drain and cover with cold water and let sit until cool. I throw ice cubes in the water because I have an ice maker. Rap the large end on the counter and they peel like a dream. It doesn't work if eggs are really fresh, however.
