My favorite is minestrone soup. For some reason I can't find the recipe - but they are on the internet and easy to find.
My DH loves it too. But his favorite is a turkey breast (either the one on the bone or the small roast). We cook them up for dinner and then the rest is for sandwiches. Once the meat is cooked you can leave the left over broth in the pot and use it for turkey stew. (Just cut up a bunch of vegetables, chop up some of the turkey meat, add some water and thickener let it cook some more and there you have another meal.) I usually remove it, let it cool in the fridge to pull the fat off the top, then cook the stew. My DD likes it served over rice, but my mom used to make biscuits.
