Default Low Salt Maple Apple Pork Chops For 2

I didn't realize that others would have the same problem I have...low salt cooking for two. All the cookbooks I have on this topic rely on making a dish and freezing left overs. So, I thought I'd post a few of the ones I have. Hope it helps others.

Maple Apple Pork Chops

1 Tbs Butter or oil, butter makes it taste better 0mg sodium

2 Apples, peeled and chopped into bite size pieces 2mg sodium - I used Gala, or whatever I have on hand, as long it isn't an apple for applesauce

2 Tbs chopped walnuts 0mg Sodium

2 Pork chops 3.5 oz = 46mg sodium

1/4 cup real maple syrup

Cook pork chops in a pan on stove top. If they get done before the apple/walnut mixture is done, keep warm.

Melt butter into pan over medium heat.
Add apple and cook for about 10 minutes.
Add walnuts and maple syrup and cook for 3 to 4 minutes.

Pour over pork and serve.

I like to keep the apple/walnute mixture warm until serving time. Then bring the mixture to a boil and cook down to a thick syrup being careful not to burn it. Add water if it gets too thick.

This is good over cooked squash like butternut squash. I can buy bags of it at the store peeled and pre-cut.
