This is the way I make fidget mats. Cut a rectangle 13 x 18 " and a piece of batting 12 x 17. FMG or straight line quilt. Cut back piece 13 x 18. Put pieces right side together, sew using 1/4 seam, leaving 5 inch opening for turning. Cut corners and turn piece right side out, poke out corners, fold 5 inch opening in and top stitch around mat. I usually top stitch another line 1/4 " from first line. Sew a zipper using a ribbon for zipper pull. Cut shapes of different textured fabric and sew onto mat, turning under edges and sewing some folded ribbons. I bought a package of squeakers to put in a fabric shape or else just stuff it with some filling. Prairie points are another decoration. As you start to decorate your mat, gather all sorts of lace, ribbons and different textured fabric scraps. Minky, toweling, silky stuff, velour. I would not use dark colors. These are so fun to do and well appreciated.
