Thanks everyone for the suggestions. I'll probably just stick with the store bought version. I generally only have a couple hours between flight decision and passenger meet up. It's a stupid-crazy lifestyle but it's what we live. I re-package the crackers we use and sometimes the fruits; veggies; muffins. If I didn't do that I'd have more food than I already do in various states of chaos in the vans! Pilots/crew are not particularly neat people! I can't even begin to describe what those trucks look like after some of the events we go to where everyone (pilots/crew) graciously brings bags/boxes of crackers; chips; pretzels; etc. It takes me hours to clean out the vans after those weekends!

None of our passengers seem to mind the re-packaging. I suppose if they do, they just don't partake. It's quite obvious what is re-packaged as it's all in tupperware-type containers and obviously not store packaging. Depending on the number of passengers for any given flight, I'll buy large quantities of food items and re package so I can split between the 2 trucks. We've been doing this for several years with no issues. I was/am more concerned with just wasting the hummus, honestly. It doesn't seem to have a particularly long shelf life - although reading one of the larger tubs one day - longer than I thought! With 6-8 passengers plus crew, we end up using about 1/2 of the small tubs. After we finish up with a several day run of good weather and/or no upcoming flights scheduled for several days, I usually send whatever leftover fruits/veggies/hummus with our vegan as long as he's not on his motorcycle!

Thanks gram2five for the heads up on the individual serving sizes. I'll have to check that out on my next Walmart run. We have the other stores you mention as well but don't generally shop there.
