I haven't made a hunter's star quilt, but I have done paper piecing. Some things that I find make it go faster -

Use the Add-a-quarter ruler. Makes it much faster, easier and more accurate when trimming off the excess fabric.

Cut your patches to a size that makes it easy to align them so there's less fussing with the patch's position before sewing.

Assembly-line the process. Cut a bunch of patches at once, sew the next patch on a group of blocks at one time, do the pressing and trimming of the group of blocks instead of one block at a time.

Maybe you're already doing these things. Pat yourself on the head for finally starting this beautiful quilt that's on your bucket list. It's on my list too, but I haven't started it.
