Mine is a copycat recipe of Panera Bread's Broccoli and Cheese soup.
2 Tbs butter + 3 Tbs flour in the bottom of a 4 qt. pan, cook to make a thick paste.
Add 2 cups of milk slowly, stirring constantly.
Then add 2 cups water
1 Tbs chicken bouillon
2 10oz. pkgs frozen chopped broccoli
1 or 2 shredded carrots
4 Tbs dried minced onion
salt and pepper to your liking
Bring to a boil and then simmer for 15 mins.
Add 2 cups shredded sharp cheddar cheese, stir and serve with a crusty bread.
