Another thought is to use something like Minky on the back. It's luxurious and it stretches a bit (some stretch makes it a little easier to both stuff and unstuff a stocking). You wouldn't add batting to the Minky side, of course, because:
1. It doesn't need it; and
2. You'd lose all stretch.
