Same here Geri, I don't find the dish very much trouble at all to prepare. But when I make them I don't cook the ground meat as so many recipes call for. I mix raw ground beef (or ground turkey) with the cooked rice and seasonings (much like you would make meatloaf only with cooked rice instead of bread crumbs) and stuff the peppers with this. Place them in a deep casserole dish (or oven proof dutch oven) and pour the sauce all around it and over it, cover and bake for an hour, uncover and bake for an additional hour. It is pretty easy.
