My mother used to make this casserole with either chicken or turkey.

1/2 can chow mien noodles on the bottom of casserole dish (large can)
2 cups diced chicken or turkey, cooked spread over noodles (use more if needed to make a good layer on the bottom)
1 1/2 cups diced celery spread over turkey
1 bunch green onion, chopped and layered over celery
1 can cream of celery soup mixed with 1 can of water, pour over contents in casserole dish (I like to add seasonings such as basil, garlic powder, parsley before putting in the pan)
top with remaining chow mien noodles and press into the ingredients layered below so they get some of the moisture

Bake at 350 for 45 min to one hour (it should be bubbly and the edges browned)
