Our favorite turkey left over dish is Turkey Gruel. (Not sure how it got that name, but it is really turkey stew.) I always cook the turkey carcass for the broth (we don't eat the drum sticks or the wings, so cooking them down for the broth along with the carcass.). Then I use the broth to cook the onions, celery, potatoes, and carrots, when they are ready I add the turkey and thicken the broth with flour and milk. I usually season it with poultry seasoning, sale, thyme, salt, and pepper. When it is thickened then I add the frozen corn and peas. It's one of those dishes you just add what ever sounds good. My DD likes it served over rice but sometimes we use biscuits - it depends what we have. My DH just likes it the way it is. I may need to get some chow mien noodles - they would make a nice crunch.
