I love really crisp lettuce and took a clue from a hotel with the best salad bar in town. After tearing the lettuce for a salad they put it in water with lots of ice and refrigerated 30 min or so before serving. Works great!
some salad bars spray their greens with a sulfite and water mix to keep them crisp and good looking. I'm allergic to sulfite, so I get stomach pains.
