Sometimes I notice something that I "missed" and I will put it back on my longarm and quilt it.

I also had an older quilt that I had batiked. This was before I knew anything about the actual "quilting" process of making a quilt. I had only stitched around my characters on the quilt. Several years later, I saw how distorted it had become from numerous washings and lack of quilting. I put it on my longarm and quilted the entire quilt. It looks so much better now and is also stable. So the answer to your question is, yes, you can add quilting after the binding has been applied.
