I would definitely stitch in the ditch around the whole thing first since you have some very long seams that can get a bit distorted when quilting. Ditching it first will help you keep those seams nice and straight when you do the rest of the quilting.

If you are planning on FMQing it, then you could have some fun doing some thread painting in the center panel. Oops, just saw that it's a baby quilt, no thread painting, that tends to get stiff.

Nice quilt, you did a good job on the piecing.
