The biggest issue you face with any type of covering on leather is that it slides. You could make one that only covers the back and the seat but it needs to have a way to anchor it to chair without using the traditional pins.
If you put the pillow case thing over the back of the leather chair. It can't slide off. It may move around a little, but it will stay on the chair.
