You will be limited by your hoop size. You are going to have the extra expense of the stabilizer, (which she uses lavishly in the videos). One of the comments she makes in her videos is about using very heavy starch.
If you are having issues creating these basic designs using traditional methods, I would try heavily starching the fabric first and trying again. Starching before cutting and piecing really helps your accuracy.
For making HST & flying geese, I would get Triangulations software. Basically, it allows you to print off paper piecing patterns for these 2 units in 1/8" increments. It's much less expensive and you are already tearing off the stabilizer so removing the paper isn't an additional step.
