Judy Niemeyer recommends batiks for her paper piecing patterns, and I personally really like them. You don't have to worry about right/wrong side, they look nice, they're non-directional, and the tighter weave helps stabilize all the bias edges as you sew (especially on big pieces).
Don't be nervous about the class - I don't know your instructor, but when I took a Judy N. Paper piecing class the instructor was super great. She made sure we were all doing well and understanding the process. There were a couple ladies who had tried paper piecing in the past and just couldn't get the hang of it; by the end, even they were enjoying themselves. Your other classes sound like fun, as well.
