I have an actual list in a doc on my computer. It has 21 items on it, but only three of them are quilts. The rest are sewing projects, big and small. A couple dresses I want to make from patterns I bought. Adding pockets to every pair of pants and every skirt and dress I own that doesn't have them (and lengthening some that have very short pockets). Cushion cover. A written list helps me organize the projects, since I can look at the list and remember what needs to be done in preparation for the next project. I probably won't end up doing all of them (why on earth did I want to make a canvas jacket?), but I'll do most of them eventually. Meanwhile I'll continue to add items to the list and it will never be much shorter.
I keep a second list of things I might do that occasionally get promoted to the first list. It's more of a jumble of things, not really a list, most of which I'll probably never look at or do, like ideas for Halloween costumes even though I haven't been to a Halloween party in years. If I get an invitation to a Halloween party at least three months in advance, then maybe!
