Interesting concept pans. I bake my own sourdough baguettes and the key to getting a good crust is spraying water in the oven while they are baking which creates steam---the same concept as these pans. So you can always get a plastic spray bottle and spray water during baking if you can't find these pans. I usually spray 3 or 4 times during the 30 minutes it takes to bake my loaves in a 450 degree oven.
