Much the same for me ... raised in a farming community and stayed close to home after marriage.
Like you, mayo was in potato salad, but in my case it was a homemade salad dressing, not at all like today's store-bought mayo. Jello salads just did not make it into the day-to-day three-squares of a farm family, but definitely were part of company meals .... or when we went to community/family/church events.
However, no, they were never made with mayo in them or served with .... nor do I recall seeing any recipes as such.
