I would pin the amount of yardage and price in two different places on the fabric...one at top and one on bottom. This way if you would cut a piece, the other end of fabric is already marked. Also initial your tags so that you know that someone didn't switch tags on you. I've done one of these sales before, believe me, a little more work ahead of time is worth the headaches later.
