For wall hangings, I have used Steam a Seam Lite 2 and then done a meander over the entire thing with invisible thread.
If you don't want to stitch it down at all, you can certainly do that too...it's your quilt and if it is just going to be hanging and not handled, I don't see a reason why not if you use a heavier fusible and get all the edges good and tight.
