I totally agree. My DH is Diabetic, so I have to be diligent on what he eats. So, if we have a big dinner the night before, we have Cereal or Eggs for Breakfast. If a light Dinner, we have a Big Breakfast; pancakes, sausage, juice, ect. His A1C is most of the time, good; 7.0 or so.
To get to the mystery of having something ready to pull out at a last minute, I rely on the deep freeze. Make extra and freeze the extra, or have it for L. or Dinner when you don't have anything or don't care if you cook. Works for us!
