My family's favorite is catfish. I buy the whole ones, leave the head on because the fish will be jucier, and remove the skin. I put one fish on a big piece of heavy duty foil, put a half tsp. of chicken bouillon in a 1/2 cup of water, stir to mix, pour it over the fish (doesn't matter if the bouillon isn't completely dissolved, it will break down during baking). Then I fold the foil closed on the top and then close up the sides. Put on a cookie sheet and bake at 350 degrees for 20 minutes. You can bake several fish, but they need to be wrapped separately with the 1/2 c. liquid in each.
