I agree with you--rail fence is excellent teaching how to work with stripsets and focus on getting that elusive 1/4" seam!
Sarah's Choice is good for teaching HST and FG. if she's interested in handwork, then maybe applique or g-ma's flower garden. log cabin is another to work on the 1/4" seam and accuracy--plus it can be used so many ways. And Drunkard's path is good for curved stitching.
