I like the last layout best. I generally use a solid (or small print that 'reads' solid) to 'pull' colors from a larger print/design. I also think your background print is very 'vintage' looking.

As to making your hourglass blocks smaller...I 'think' if you measure out from the center of those blocks whatever distance you decide, then trim on all four sides, you can get to a smaller size without having to re-do all of those blocks. You could sash those smaller hourglass blocks with your background fabric to make the background more prominent?? Just be careful as it appears to be somewhat directional??
