I've been making German Potato salad for years since marrying into a German family. Here is my recipe with the
"approximate" measurements, but it does call for significant amt. of vinegar.
6 medium potatoes cooked with skin on
1/2 # of bacon - cut into small pieces and fried crisp
3/4 cup chopped onions
2 Tbsp flour
3 Tbsp sugar
1/2 tsp salt
1 tsp. celery seed
3/4 - 1 cup water
1/2 - 3/4 cup white vinegar
Drain the cooked potatoes, cool and then peel and slice into a large bowl; set aside
Remove the bacon from the pan and set aside. Fry the onions in the bacon grease until transparent, then add the flour, salt and celery seed. Add the water and vinegar and cook until the mixture thickens. Pour thickened sauce over the sliced potatoes, add bacon and serve warm.
We keep adding sugar if the vinegar is too strong and I usually make a larger portion, so the amounts can vary to get the right thickness to the sauce.
My husband just requested a big batch to have on hand while I am out of town this week

. He likes it both warm and cold. I hope this helps.
