I like to brine them overnight. Cook in oven with a little olive oil on 425°. Take their temperature and take out of the oven when they hit 180-185°. (5° below the poultry setting on the thermometer) Temperature is more important than time.
You could shred it finely, add BBQ sauce and make sandwiches.
