You can make a pumpkin cake w/o eggs. I'd so it flat, not layers. I have a post depression cookbook with recipes without eggs. The baking powder will help it rise, the pumpkin will keep it moist, so all is good. I also like pumpkin soup. I've accidentally left the eggs out of pumpkin cookies and they were okay.
