Turkey Tuscan Soup. One of our favorites. It calls for canned pumpkin, but I'm sure you can figure it out.

We also love using pumpkin for my husband's favorite bundt cake.
Dark Fudge cake mix
1 can pumpkin
1 cup water.
Mix for 2 -3 minutes with electric mixer, Pour into prepared bundt pan.
Bake 45-50 minutes at 340 degrees.
It remains really moist. So much so, that you can barely cut it.
We like to melt Nutella on it while it's warm, like frosting.
