My favorite that fits this bill is the Double Slice Layer Cake by Jenny Doan. You start with 10" squares... either a layer cake or cut your own from stash. It looks great, has tons of movement, and is easy and fast to put together.

These both are 48 block layouts (6x8) so you would start with 48 10" squares. The quilt comes out nearly as big as the top of a double bed.
