Sufganiyot (donuts) are traditional - they are fried in oil, symbolic like latkes. Something fried in oil would be necessary, because of the reason behind Chanukah and donuts are easier than latkes. Even bought donuts are fine.
Noodle kugel can be made ahead.
If you can manage it, brisket. This can be made ahead too. Leave this out if you are going kosher and serving a dairy meal.
If you want to include potatoes, potato kugel can also be made in advance. Goes with meat or dairy.
