Eleanor Burns has one method using two squares, one larger than the other.

But the one I really like is the "No Waste" method. Four small squares are sewn to a larger square, but this is done one at a time with cutting between. There is literally no waste except for the tiny bit you might cut off to square it up. That's not hard. Look up "No Waste Flying Geese".
