1 med. onion, chopped
3T. butter
4c. cooked carrots

2 cups shredded cheddar cheese

3c. stuffing mix (fine, more like bread crumbs)

In small sauce pan, brown onion in 3T. butter. Set aside 1/4c. cheese. Combine the onion, carrots, soup, milk, salt and cheese in 2 1/2 qt. casserole. Melt butter in sauce pan. Add stuffing and stir. Then stir all together in casserole. Top with reserved cheese. Bake at 350º for 30 min. covered, 15 min. uncovered.
