Looking at what Amazon shows for the book with its "Look Inside!" feature, the book includes entries in the index for "Circling Geese" and "Expanding Checkerboard". The paper piecing patterns shown include the one for circling geese.

If the book does not include instructions for making the layered geese, it's not too hard to extend the idea of the circling geese to make the layered geese. You need to have a paper piecing pattern for the large radius circle in the center and another one for the smaller radius circles in the corners, and both need to use the same size geese. You make a good size strip for the larger circle (with the geese flying clockwise) and then add a strip for the smaller circle (with the geese flying clockwise).

The whole quilt is magnificent, but boy is that a *lot* of piecing. If you've never done anything remotely as complex as this, you may want to to try out a smaller version of some of these ideas to see whether or not you find it enjoyable before you dive into a large scale version.
